- Preheat your oven to 400°F (200°C). On a large baking sheet, toss the prepared carrot pieces with the olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper. - While the carrots are roasting, combine the drained ricotta cheese, 2 tablespoons of milk (or cream), fresh lemon juice, and a pinch of garlic powder (if using) in a medium bowl. Use an electric mixer (handheld or stand mixer with whisk attachment) or a whisk to whip the ricotta until it's light, airy, and smooth, resembling whipped cream. Season with a small pinch of salt and pepper, tasting and adjusting as needed. Notes
Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. Reheat carrots gently, serve ricotta at room temperature. Freezing is not recommended.
