Whipped Ricotta
  • 1 cup whole milk ricotta cheese well-drained

  • 1 tablespoon fresh lemon juice
  • 1 pinch garlic powder (optional)
  • 0.25 cup hot honey (store-bought or homemade)
  • 2 tablespoons toasted chopped pistachios or walnuts (for garnish)
  • 1 teaspoon fresh thyme leaves (for garnish)

Method
 

  1. Preheat your oven to 400°F (200°C). On a large baking sheet, toss the prepared carrot pieces with the olive oil, ½ teaspoon salt, and ¼ teaspoon black pepper. Ensure the carrots are spread in a single layer for even roasting.

  2. Place the baking sheet in the preheated oven and roast for 25-30 minutes, or until the carrots are tender and nicely caramelized, with some slightly browned edges. Halfway through the roasting time, give the carrots a gentle toss for even cooking.
  3. While the carrots are roasting, combine the drained ricotta cheese, 2 tablespoons of milk (or cream), fresh lemon juice, and a pinch of garlic powder (if using) in a medium bowl. Use an electric mixer (handheld or stand mixer with whisk attachment) or a whisk to whip the ricotta until it's light, airy, and smooth, resembling whipped cream. Season with a small pinch of salt and pepper, tasting and adjusting as needed. The consistency should be spoonable but not overly runny.

  5. Carefully arrange the warm roasted carrots over the whipped ricotta.

Notes

Leftovers can be stored in an airtight container in the refrigerator for 2-3 days. Reheat carrots gently, serve ricotta at room temperature. Freezing is not recommended.
