Ingredients
  

  • 1 pound Leftover prime rib thinly sliced or cut into bite-sized pieces
  • 2 tablespoons Soy sauce or tamari for gluten-free
  • 1 tablespoon Oyster sauce
  • 1 tablespoon Shaoxing wine or dry sherry, or water
  • 1 teaspoon Sesame oil
  • 1 teaspoon Cornstarch
  • 2 tablespoons Vegetable oil or other high-heat cooking oil, divided
  • 1 medium Yellow onion thinly sliced
  • 2 cloves Garlic minced
  • 1 inch Ginger grated or minced
  • 1 Red bell pepper seeds removed and thinly sliced
  • 1 Green bell pepper seeds removed and thinly sliced
  • 1 cup Broccoli florets blanched or steamed until tender-crisp
  • 1/2 cup Snow peas or sugar snap peas trimmed (optional)
  • Cooked rice for serving
  • Sesame seeds for garnish (optional)
  • Chopped green onions for garnish (optional)

Method
 

  1. In a small bowl, whisk together the soy sauce (or tamari), oyster sauce, Shaoxing wine (or sherry/water), sesame oil, and cornstarch until the cornstarch is fully dissolved and the sauce is smooth. Set aside.

  2. If you have a few extra minutes, toss the sliced prime rib with 1 tablespoon of the prepared sauce and let it sit for at least 10 minutes. This will help tenderize the meat further and infuse it with flavor.

  3. Place a wok or a large, heavy-bottomed skillet over high heat. Let it get smoking hot.
  4. Add 1 tablespoon of vegetable oil to the hot wok. Carefully add the prime rib in a single layer (you may need to do this in batches to avoid overcrowding, which will steam rather than sear). Sear for about 1-2 minutes per side, until browned and slightly crispy. Remove the prime rib from the wok and set aside.

  5. Add the remaining 1 tablespoon of vegetable oil to the wok. Add the sliced yellow onion and stir-fry for 1-2 minutes until it starts to soften. Add the minced garlic and grated ginger, and stir-fry for another 30 seconds until fragrant, being careful not to burn them.

  6. Add the sliced red and green bell peppers to the wok. If using snow peas or sugar snap peas, add them now as well. Stir-fry for 3-4 minutes, or until the vegetables are tender-crisp. You want them to retain a slight bite.

  7. Toss in the blanched or steamed broccoli florets and stir-fry for another minute to heat them through.

  8. Return the seared prime rib to the wok with the vegetables. Give the prepared sauce a quick stir to re-dissolve the cornstarch. Pour the sauce evenly over the mixture in the wok.

  9. Stir continuously for 1-2 minutes, or until the sauce thickens and coats all the ingredients.
  10. Remove the wok from the heat immediately. Serve the Leftover Prime Rib Stir Fry hot over steamed rice. Garnish with sesame seeds and chopped green onions, if desired.
