Ingredients

  • 1 pound ground beef
  • 1/2 cup diced onion
  • 2 cloves garlic, minced
  • 1 tablespoon chili powder
  • 1 teaspoon cumin
  • 1/2 teaspoon paprika
  • 1/4 teaspoon cayenne pepper optional, for heat
  • salt and freshly ground black pepper to taste
  • 10-12 low-carb tortillas e.g., almond flour tortillas, coconut flour tortillas, or approved store-bought options
  • 2 tablespoons olive oil or avocado oil for frying
Optional toppings
  • Shredded lettuce
  • diced tomatoes
  • chopped cilantro
  • avocado slices
  • sour cream
  • shredded cheddar cheese
  • salsa
  • hot sauce

Equipment

  • Large skillet
  • Tongs
  • Plate lined with paper towels
  • Baking Sheet
  • Toaster oven

Method

  1. Prepare the Beef Filling: In a large skillet, brown the ground beef over medium-high heat. Drain off any excess fat.
    1 pound ground beef
  2. Add Aromatics and Spices: Add the diced onion to the skillet with the browned beef and cook until softened, about 3-4 minutes. Stir in the minced garlic and cook for another minute until fragrant.
1/2 cup diced onion, 2 cloves garlic, minced
  3. Season the Beef: Sprinkle in the chili powder, cumin, paprika, cayenne pepper (if using), salt, and black pepper. Stir well to combine and cook for an additional 2 minutes, allowing the spices to bloom and coat the beef. Taste and adjust seasoning as needed.
1 tablespoon chili powder, 1 teaspoon cumin, 1/2 teaspoon paprika, 1/4 teaspoon cayenne pepper, salt and freshly ground black pepper
  4. Warm the Tortillas: Lightly warm the low-carb tortillas so they become pliable. You can do this by placing them in a dry skillet for about 20-30 seconds per side, microwaving them for a few seconds wrapped in a damp paper towel, or gently warming them over a gas flame for a few seconds. This step is crucial to prevent them from cracking when rolled.
    10-12 low-carb tortillas
  5. Assemble the Taquitos: Place a generous tablespoon or two of the seasoned beef mixture along the center of each tortilla. Tightly roll up each tortilla to form a taquito shape.
    10-12 low-carb tortillas
  6. Fry the Taquitos: Heat the olive oil or avocado oil in a large skillet over medium heat.
2 tablespoons olive oil or avocado oil, 1 pound ground beef
  7. Cook Until Golden and Crispy: Carefully place the rolled taquitos seam-side down into the hot oil. Cook for 3-4 minutes per side, or until all sides are golden brown and crispy. You may need to do this in batches to avoid overcrowding the pan. Use tongs to flip them gently.
2 tablespoons olive oil or avocado oil
  8. Drain Excess Oil: Once crispy, remove the taquitos from the skillet and place them on a plate lined with paper towels to drain any excess oil.
  9. Serve and Enjoy: Serve your hot and crispy Keto Beef Taquitos immediately with your favorite low-carb toppings.
Shredded lettuce, diced tomatoes, chopped cilantro, avocado slices, sour cream, shredded cheddar cheese, salsa, hot sauce

Notes

For storing cooked Keto Beef Taquitos, allow them to cool completely first. Once cooled, place them in an airtight container or a resealable plastic bag and refrigerate for up to 3-4 days. To reheat, a great way to maintain crispiness is to place them on a baking sheet in a preheated oven or toaster oven at 350°F (175°C) for about 8-10 minutes, or until heated through and warmed. Alternatively, you can gently reheat them in a skillet over medium-low heat, though they may not be as uniformly crispy. For longer storage, you can freeze the cooled taquitos in a single layer on a baking sheet until firm, then transfer them to a freezer-safe bag or container. They can be kept frozen for up to 2-3 months. Reheat from frozen by baking them at 350°F (175°C) for about 15-20 minutes, or until thoroughly heated.
