- In a medium bowl, combine the cut chicken thighs, half of the Hawaiian BBQ sauce, soy sauce, brown sugar, rice vinegar, grated ginger, and garlic powder. Toss to coat the chicken evenly. - Drizzle any remaining marinade from the bowl over the chicken and vegetables in each packet. Spoon a generous amount of the remaining Hawaiian BBQ sauce over the entire contents of each packet. - Bring the edges of the foil together and crimp them tightly to create sealed packets. Ensure there are no gaps to prevent leakage and to trap the steam, which will cook the ingredients.
- Preheat your grill or oven to 400°F (200°C).
- Place the foil packets directly on the grill grates or on a baking sheet in the oven.
- Grilling Method: Grill for 20-25 minutes, or until the chicken is cooked through and no longer pink in the center, and the vegetables are tender-crisp. The pineapple should be slightly caramelized.
- Oven Method: Bake for 25-30 minutes in the preheated oven, or until the chicken is cooked through and the vegetables are tender-crisp.
- Carefully open the foil packets (watch out for steam!). Garnish with chopped fresh cilantro or green onions, if desired. Serve hot directly from the foil packets or transfer to plates.Optional chopped fresh cilantro or green onions
Notes
Allow leftovers to cool completely before refrigerating for up to 3-4 days. Freeze for up to 2-3 months. Reheat in the oven at 350°F (175°C) for 10-25 minutes, or on the stovetop in a skillet over medium-low heat.
