Ingredients
  

For the Marinade & Shrimp
  • 1.5 lbs Large shrimp Peeled and deveined (tails on recommended)
  • 1/4 cup Olive oil
  • 1/4 cup Fresh lime juice About 2 limes
  • 4 cloves Garlic Minced
  • 1 teaspoon Smoked paprika
  • 1/2 teaspoon Red pepper flakes Adjust to taste
  • 1 teaspoon Kosher salt
  • 1/2 teaspoon Black pepper
  • 1 medium Lime Cut into wedges for serving
  • 1 tablespoon Fresh cilantro Chopped, for garnish

  • 8-10 Wooden or metal skewers If using wooden, soak for 30 minutes prior

Method
 

Instructions
  1. Prepare the marinade: In a medium bowl, whisk together the olive oil, lime juice, minced garlic, smoked paprika, red pepper flakes, salt, and black pepper.
  2. Marinate the shrimp: Add the prepared shrimp to the marinade bowl. Toss gently to ensure all shrimp are evenly coated. Cover and refrigerate for a minimum of 15 minutes, but no longer than 30 minutes (acid can start to 'cook' the shrimp).
  3. Preheat your grill to medium-high heat (about 400°F / 200°C). If using wooden skewers, ensure they have been soaked. Thread the marinated shrimp onto the skewers, being careful not to pack them too tightly.
  4. Grill the skewers: Lightly oil the grill grates. Place the shrimp skewers directly on the hot grill. Cook for 2-3 minutes per side, until the shrimp turn pink, opaque, and slightly charred.
  5. Remove the skewers from the grill immediately. Arrange them on a serving platter.
  6. Garnish the finished skewers generously with freshly chopped cilantro and serve immediately with fresh lime wedges for an extra squeeze of zest.

Notes

For extra flavor, substitute half the olive oil with avocado oil. Ensure your grill is hot enough to sear the shrimp quickly without overcooking them.
