Ingredients
  

  • 1.5 lbs boneless, skinless chicken thighs or breasts, cut into 1-inch pieces
  • 1/2 cup low-sodium soy sauce
  • 1/4 cup honey
  • 1/4 cup packed brown sugar
  • 1/4 cup rice vinegar
  • 2 tablespoons sesame oil
  • 3 cloves garlic, minced
  • 1 tablespoon fresh ginger, grated
  • 1 tablespoon cornstarch
  • 2 tablespoons cold water
  • Cooked rice, for serving
  • Chopped green onions, for garnish
  • Toasted sesame seeds, for garnish

Method
 

  1. In your slow cooker, combine the soy sauce, honey, brown sugar, rice vinegar, sesame oil, minced garlic, and grated ginger. Whisk everything together until well incorporated.

  2. Place the cut chicken pieces directly into the slow cooker on top of the sauce mixture. Ensure the chicken is mostly submerged in the liquid.

  3. Cover the slow cooker and cook on Low for 3-4 hours, or on High for 2-3 hours, until the chicken is cooked through and tender.
  4. Once the chicken is cooked, carefully remove the chicken pieces from the slow cooker and set them aside on a plate. In a small bowl, whisk together the cornstarch and cold water to create a slurry.

  5. Pour this slurry into the slow cooker with the remaining sauce. Turn the slow cooker to High (if it wasn't already) and cook for another 15-30 minutes, stirring occasionally, until the sauce has thickened to your desired consistency.
  6. Return the cooked chicken to the slow cooker and stir to coat evenly with the thickened sesame sauce.

Notes

For best results when reheating, gently reheat in a skillet over medium-low heat, adding a tablespoon or two of water or chicken broth if the sauce has thickened too much. Store leftovers in an airtight container in the refrigerator for up to 3-4 days.
