Method
- Lightly grease your slow cooker insert with cooking spray or a little butter to prevent sticking. This step is optional but recommended, especially if you’re using a new crock pot.
- Place the boneless, skinless chicken breasts or thighs in a single layer at the bottom of the slow cooker. If using chicken breasts, you can trim any excess fat. Chicken thighs tend to stay more tender during the slow cooking process, but both work beautifully.1.5 – 2 pounds boneless, skinless chicken breasts or thighs
- Evenly sprinkle the entire packet of dry ranch seasoning mix over the chicken. Make sure to get it all over the surface of the meat for maximum flavor distribution.1 packet (1 ounce) dry ranch seasoning mix
- In a medium bowl, whisk together the condensed cream of chicken soup and the chicken broth until smooth. Pour this mixture evenly over the chicken and ranch seasoning in the crock pot. - Distribute the cubed, softened cream cheese over the top of the chicken and soup mixture. As the crock pot cooks, the cream cheese will melt and create an incredibly rich and velvety sauce that coats every piece of chicken.4 ounces cream cheese
- Cover the crock pot with its lid and cook on HIGH for 4 to 6 hours, or on LOW for 6 to 8 hours. The chicken is done when it is completely cooked through and easily shreds with a fork. Cooking time may vary slightly depending on your crock pot model.
- Once the chicken is cooked and tender, carefully remove it from the crock pot and place it on a cutting board or in a large bowl. Using two forks, shred the chicken into bite-sized pieces.
- Return the shredded chicken back into the crock pot with the creamy ranch sauce. Stir everything together to coat the shredded chicken evenly with the delicious sauce.
- Allow the shredded chicken to simmer in the sauce for another 10-15 minutes on the WARM setting, or just until heated through. This allows the chicken to absorb even more of the amazing ranch flavor. Serve your Creamy Ranch Chicken hot.
Notes
Allow the Creamy Ranch Chicken Crock Pot to cool completely before storing. Transfer any leftovers to an airtight container and refrigerate for up to 3-4 days. For longer storage, portion the cooked and cooled chicken into freezer-safe containers or heavy-duty freezer bags. It can be frozen for up to 2-3 months. To reheat, gently warm the chicken and sauce in a saucepan over low heat, stirring occasionally, until heated through. Alternatively, you can reheat individual portions in the microwave. Add a splash of chicken broth or milk if the sauce seems too thick after chilling. Thaw frozen chicken overnight in the refrigerator before reheating using the methods above.
