  • 1/4 cup unsalted butter softened
  • 8 ounces cream cheese softened
  • 1 teaspoon vanilla extract
  • 1/2 cup powdered sugar
  • 1 cup semi-sweet chocolate chips
  • 1 tablespoon vegetable oil or coconut oil (for melting chocolate)

Method
 

  1. In a medium bowl, combine the finely crushed Cherry Mash candy bars, softened butter, and softened cream cheese.

  2. Using an electric mixer or a sturdy spatula, beat the ingredients together until the mixture is smooth and well combined. Ensure there are no lumps of cream cheese remaining.
  3. Stir in the vanilla extract and powdered sugar. Continue mixing until everything is thoroughly incorporated and the mixture has a cohesive, dough-like consistency.

  4. Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or until firm enough to roll into balls. This chilling step is crucial for easy handling.
  5. Once chilled, scoop out tablespoonfuls of the mixture and gently roll them into small balls, about 1 inch in diameter. Place the rolled truffle balls onto a baking sheet lined with parchment paper.
  6. While the truffle balls are chilling or being rolled, prepare your chocolate coating. In a microwave-safe bowl, combine the semi-sweet chocolate chips and the vegetable or coconut oil. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted. Alternatively, you can melt the chocolate using a double boiler.

  7. Using a fork or a toothpick, carefully dip each truffle ball into the melted chocolate, ensuring it's fully coated. Allow any excess chocolate to drip back into the bowl.
  8. Return the chocolate-dipped truffles to the parchment-lined baking sheet. If desired, immediately sprinkle a little extra crushed Cherry Mash candy onto the wet chocolate for added texture and visual appeal.

  9. Place the baking sheet with the dipped truffles back into the refrigerator for at least 15-20 minutes, or until the chocolate has hardened completely.

Notes

Best stored in an airtight container in the refrigerator. Can be frozen for up to 2 months.
