- Using an electric mixer or a sturdy spatula, beat the ingredients together until the mixture is smooth and well combined. Ensure there are no lumps of cream cheese remaining.

- Cover the bowl with plastic wrap and refrigerate for at least 30 minutes, or until firm enough to roll into balls. This chilling step is crucial for easy handling.
- Once chilled, scoop out tablespoonfuls of the mixture and gently roll them into small balls, about 1 inch in diameter. Place the rolled truffle balls onto a baking sheet lined with parchment paper.
- While the truffle balls are chilling or being rolled, prepare your chocolate coating. In a microwave-safe bowl, combine the semi-sweet chocolate chips and the vegetable or coconut oil. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is smooth and fully melted. - Using a fork or a toothpick, carefully dip each truffle ball into the melted chocolate, ensuring it's fully coated. Allow any excess chocolate to drip back into the bowl.

- Place the baking sheet with the dipped truffles back into the refrigerator for at least 15-20 minutes, or until the chocolate has hardened completely.
