- Preheat your oven to 350°F (175°C). Grease and flour an 8x8 inch baking pan or line it with parchment paper, leaving an overhang on the sides for easy lifting.
- In a large mixing bowl, whisk together the all-purpose flour, granulated sugar, unsweetened cocoa powder, baking soda, and salt. Ensure everything is thoroughly combined to prevent lumps.2 cups all-purpose flour, 1 ½ cups granulated sugar, ¾ cup unsweetened cocoa powder, 1 teaspoon baking soda, ½ teaspoon salt
- To the dry ingredients, add the melted butter, large eggs, vanilla extract, and milk. Stir with a whisk or spatula until just combined. Be careful not to overmix.½ cup unsalted butter, melted, 2 large eggs, 1 teaspoon vanilla extract, ½ cup milk (any kind)
- Gently fold in the finely chopped, steamed broccoli florets and the crumbled feta cheese into the batter. If you’re using them, add the semi-sweet chocolate chips now too. The batter will be thick.1 cup finely chopped broccoli florets, steamed until tender and excess water squeezed out, ½ cup crumbled feta cheese, ½ cup semi-sweet chocolate chips
- Spread the batter evenly into the prepared baking pan. Use your spatula to smooth the top.
- Bake for 25-30 minutes, or until a toothpick inserted into the center comes out with moist crumbs attached. Be mindful not to overbake, as this can dry out your brownies.
- Let the Broccoli Feta Brownies cool completely in the pan on a wire rack before slicing and serving. This allows them to set properly and the flavors to meld.
Notes
To store your delicious Broccoli Feta Brownies, ensure they are completely cooled. Once cooled, wrap the pan tightly with plastic wrap or transfer the brownies to an airtight container. They will stay fresh at room temperature for up to 2 days, or in the refrigerator for up to 5 days. For longer storage, you can freeze them. Wrap individual brownies or slices tightly in plastic wrap, then place them in a freezer-safe bag or container. Frozen brownies will retain their quality for up to 3 months.
To reheat, you can enjoy them at room temperature or gently warm them. For a slightly gooey texture, place a slice on a microwave-safe plate and microwave for 10-20 seconds on low power, just until warmed through. If reheating from frozen, allow them to thaw in the refrigerator overnight before warming, or microwave for slightly longer (20-30 seconds). Avoid reheating for too long, as this can dry them out.
