Ingredients
  

For the Skewers
  • 6 Wooden skewers (6-inch) Soak in water for 30 minutes if grilling
  • 4 cups Watermelon Cubed into 1-inch pieces, seeds removed
  • 8 oz Feta cheese Cubed into 1/2-inch pieces
  • 1/4 cup Fresh mint leaves Whole leaves
  • 1 small Red onion Thinly sliced and cut into small wedges (optional)
For the Glaze
  • 2 Tbsp Balsamic vinegar
  • 1 tsp Honey or maple syrup

Method
 

Instructions
  1. Prepare the balsamic glaze: In a small saucepan, combine the balsamic vinegar and honey (or maple syrup). Bring to a gentle simmer over medium-low heat. Cook until the glaze has reduced slightly and coats the back of a spoon (about 3-5 minutes). Set aside to cool.
  2. If using wooden skewers, ensure they have been soaked in water to prevent burning.
  3. Begin assembling the skewers. Thread the ingredients onto the skewers in an alternating pattern: start with a watermelon cube, then a piece of feta, a mint leaf (folded if large), and optionally a small piece of red onion.
  4. Continue layering until the skewer is full, aiming for approximately 3 pieces of watermelon and 2 pieces of feta per skewer. Repeat until all ingredients are used.
  5. Arrange the finished skewers on a platter for serving.
  6. Just before serving, lightly drizzle the cooled balsamic glaze over the assembled skewers. Serve immediately for the best texture and flavor contrast.

Notes

For an extra touch, lightly grill the assembled skewers for 1 minute per side before glazing. This adds a lovely smoky flavor to the feta.
