- Prepare the vinaigrette: In a small bowl, whisk together the lime juice, olive oil, honey (or maple syrup), black pepper, and salt until emulsified.
- Prepare the watermelon and onion: If you haven't already, cube the watermelon into bite-sized pieces. Thinly slice the red onion and place it in a basin of cold water for 5 minutes to reduce its sharpness; drain thoroughly afterwards.
- Assemble the salad components: In a large mixing bowl, gently combine the cubed watermelon, drained red onion slices, and half of the chopped fresh mint.
- Dress the salad: Drizzle about two-thirds of the prepared vinaigrette over the watermelon mixture. Gently toss everything together until lightly coated. Be careful not to over-mix, as this can break down the watermelon.
- Add feta and serve: Transfer the salad to a serving platter or large bowl. Evenly sprinkle the crumbled feta cheese and the remaining fresh mint over the top.
- Finish and Chill: Drizzle the remaining light dressing over the feta, if desired. Serve immediately, or chill for up to 30 minutes before serving for enhanced flavor, ensuring it is served cold.
Notes
For best results, prepare the watermelon just before serving, as it tends to release excess liquid the longer it sits. If using balsamic glaze instead of lime vinaigrette, use sparingly.
