  • 6 cups seedless watermelon cubed
  • 2 English cucumbers sliced or chopped
  • 1/2 cup red onion thinly sliced
  • 1/2 cup fresh mint leaves roughly chopped
  • 1/4 cup feta cheese (optional) crumbled
For the Honey Lime Dressing
  • 3 tablespoons fresh lime juice
  • 2 tablespoons honey
  • 1 tablespoon extra virgin olive oil
  • 1/4 teaspoon salt or to taste
  • 1/8 teaspoon black pepper

  1. Prepare the Honey Lime Dressing: In a small bowl, whisk together the fresh lime juice, honey, olive oil, salt, and black pepper until well combined and emulsified. Set aside.
  2. Combine the main salad ingredients: In a large mixing bowl, gently combine the cubed watermelon, sliced cucumber, and thinly sliced red onion.
  3. Add the mint: Sprinkle the chopped fresh mint leaves over the watermelon and cucumber mixture.
  4. Dress the salad: Just before serving, drizzle the prepared honey lime dressing evenly over the salad ingredients. Gently toss everything together to ensure the fruit and vegetables are lightly coated.
  5. Garnish and serve: If using, gently fold in the crumbled feta cheese. Taste and adjust seasoning if necessary. Serve immediately for the best texture.
  6. For optimal flavor, you may chill the salad components (without dressing) for 30 minutes prior to mixing.

Notes

This salad is best assembled immediately before serving to prevent the watermelon from becoming overly watery. For a slight kick, you can add a pinch of red pepper flakes to the dressing.
