Ingredients
  

For the Dressing Base
  • 2 cups Watermelon cubed, seedless
  • 1 cup Cucumber peeled and roughly chopped
  • 1/2 cup Feta Cheese crumbled
  • 1/4 cup Lime Juice freshly squeezed
  • 2 tablespoons Honey or maple syrup for vegan option
  • 1/4 cup Extra Virgin Olive Oil
  • 1/4 teaspoon Salt or to taste
  • 1/8 teaspoon Black Pepper freshly ground
Optional Garnish Ingredients
  • 1 tablespoon Mint fresh, finely chopped

Method

  1. In a high-speed blender, combine the cubed watermelon, chopped cucumber, crumbled feta cheese, fresh lime juice, and honey.
  2. Blend on high until the mixture is completely smooth and liquidized, scraping down the sides as necessary. This may take 1-2 minutes depending on your blender.
  3. With the blender running on low speed, slowly drizzle in the extra virgin olive oil until the dressing emulsifies slightly and achieves a creamy consistency.
  4. Taste the dressing. Add salt and freshly ground black pepper. If it needs more tang, add a tiny splash more lime juice. If it needs more sweetness, add a drizzle more honey.
  5. If you desire a very smooth dressing, strain the mixture through a fine-mesh sieve to remove any remaining pulp or feta granules. For a thicker dressing, skip the straining.
  6. Stir in the finely chopped fresh mint (if using). Transfer the dressing to an airtight container and chill for at least 15 minutes before serving to allow the flavors to meld.

Notes

This dressing is best served chilled. It will separate upon standing; stir or shake well before using. Due to the fresh fruit content, consume within 3 days for optimal freshness.
