For the Salad
  • 4 cups Seedless Watermelon Cubed into 1-inch pieces
  • 1 English Cucumber Deseeded and sliced
  • 1 Avocado Diced
  • 1/4 cup Red Onion Thinly sliced
  • 1/2 cup Fresh Mint Leaves Roughly chopped
For the Lime Vinaigrette
  • 3 tablespoons Fresh Lime Juice
  • 2 tablespoons Extra Virgin Olive Oil
  • 1 teaspoon Honey or Agave Nectar Adjust to taste
  • 1/4 teaspoon Sea Salt
  • 1/8 teaspoon Black Pepper

Method

  1. Prepare the vegetables and fruit: Gently cube the watermelon, slice the cucumber (removing large seeds if present), dice the avocado, and thinly slice the red onion.
  2. Make the vinaigrette: In a small bowl or jar, whisk together the fresh lime juice, olive oil, honey (or agave), sea salt, and black pepper until well emulsified.
  3. Combine the main ingredients: In a large, wide serving bowl, gently toss together the watermelon cubes, cucumber slices, red onion, and most of the chopped mint. Be careful not to crush the watermelon.
  4. Dress the salad: Just before serving, drizzle the lime vinaigrette evenly over the salad ingredients. Gently toss one last time to coat everything lightly. Taste and adjust seasoning if necessary.
  5. Garnish and serve: Carefully fold in the diced avocado. Sprinkle the remaining fresh mint over the top for garnish. Serve immediately while the ingredients are crisp and chilled.

Notes

This salad is best assembled immediately before serving, as the watermelon releases liquid over time. For an extra savory note, consider adding 1/4 cup of crumbled feta cheese alongside the avocado.
