Ingredients

  • 1 cup plain Greek yogurt full-fat or reduced-fat
  • 1/2 cup fresh strawberries finely chopped or pureed
  • 2 tablespoons maple syrup or honey adjust to taste
  • 1 teaspoon vanilla extract
  • 1/2 cup dark chocolate chips or your favorite kind
  • 1 teaspoon coconut oil optional, for smoother chocolate
  • extra chopped strawberries or freeze-dried strawberries for topping (optional)

Equipment

  • Baking Sheet
  • Parchment paper
  • Microwave-safe bowl
  • Double boiler
  • Piping bag

Method

  1. In a medium bowl, combine the Greek yogurt, finely chopped or pureed fresh strawberries, maple syrup (or honey), and vanilla extract. Stir gently until all the ingredients are well incorporated and you have a uniform pink hue. Taste and adjust the sweetness if needed by adding a little more maple syrup or honey.
1 cup plain Greek yogurt, 1/2 cup fresh strawberries, 2 tablespoons maple syrup or honey, 1 teaspoon vanilla extract
  2. Cover the bowl with plastic wrap or a lid and place it in the refrigerator for at least 30 minutes. This step is crucial to slightly firm up the yogurt, making it easier to scoop and preventing the chocolate from melting too quickly when you add it.
  3. While the yogurt is chilling, prepare your chocolate for drizzling. Place the dark chocolate chips in a microwave-safe bowl. Add the coconut oil if you’re using it – this helps the chocolate melt more smoothly and gives it a nice sheen. Microwave in 30-second intervals, stirring well after each interval, until the chocolate is completely melted and smooth. Be careful not to overheat. Alternatively, you can melt the chocolate in a double boiler over simmering water.

  4. Once the yogurt mixture has chilled and firmed up slightly, spoon dollops of the strawberry yogurt mixture onto a baking sheet lined with parchment paper. Aim for bite-sized portions, like small mounds or clusters. Don't worry about making them perfect; the rustic look is part of the charm!
  5. Using a spoon or a piping bag with a small tip, drizzle the melted chocolate over the yogurt clusters. You can create lines, swirls, or simply coat the tops. If you like, you can also sprinkle some extra chopped fresh strawberries or freeze-dried strawberry pieces on top of the chocolate before it sets for added texture and flavor.

  6. Carefully transfer the baking sheet to your freezer. Allow the Viral Chocolate Strawberry Yogurt Clusters to freeze for at least 1-2 hours, or until they are firm and the chocolate has hardened completely.
  7. Once frozen, gently peel the clusters off the parchment paper. They are now ready to be enjoyed! For best results, eat them within a few days of making them.
