- In a medium saucepan over low to medium heat, combine the cubed Velveeta cheese, the undrained can of Rotel Diced Tomatoes and Green Chilies, and the milk. If you're opting for the optional jalapeños, chili powder, or cumin, add them now.1 (16 ounce) box Velveeta cheese, 1 (10 ounce) can Rotel Diced Tomatoes and Green Chilies, 1/4 cup milk, 1/4 cup jalapeño, 1/2 teaspoon chili powder, 1/4 teaspoon cumin
- Begin stirring the mixture gently and continuously. The Velveeta will start to melt, and the Rotel will integrate, creating a beautiful, uniform color. Continue stirring until the cheese is completely melted and the dip is smooth and creamy with no lumps. This usually takes about 5-8 minutes. Be sure to keep the heat on low to prevent scorching.
- If the queso is a little too thick for your liking, you can add another tablespoon or two of milk, stirring until you reach your desired consistency.1/4 cup milk
- Once the dip is perfectly smooth and heated through, remove it from the heat. Garnish with fresh cilantro and additional diced jalapeños if desired. Notes
Leftover Velveeta Queso Dip can be stored in an airtight container in the refrigerator for up to 3-4 days. Reheat gently on the stovetop over low heat, stirring frequently. You may need to add a tablespoon or two of milk or water to thin it out. Alternatively, reheat small portions in the microwave in 30-second intervals, stirring between each. Freezing is not recommended.
