  • 1 inch ginger, grated or finely minced
  • 1/4 cup soy sauce or tamari (for gluten-free)
  • 2 tablespoons rice vinegar
  • 1 tablespoon sesame oil
  • 1 tablespoon maple syrup or agave nectar
  • 1 teaspoon sriracha or chili garlic sauce adjust to your spice preference
  • 1/2 cup vegetable broth
  • 1/4 cup creamy peanut butter (smooth or crunchy)
  • 1 tablespoon nutritional yeast optional, for added cheesiness/umami

  1. Cook the ramen noodles according to package directions. If using instant ramen, be sure to discard the seasoning packet as we'll be making our own sauce. Drain the noodles well and set them aside. For fresh ramen, follow the same cooking and draining instructions.

  2. Heat the neutral cooking oil in a large skillet or wok over medium heat. Add the minced garlic and grated ginger. Sauté for about 30-60 seconds until fragrant, being careful not to burn them. This step infuses the oil with aromatic goodness.

  3. In a small bowl, whisk together the soy sauce (or tamari), rice vinegar, sesame oil, maple syrup (or agave nectar), and sriracha (or chili garlic sauce). This creates the tangy, sweet, and spicy foundation of our sauce.

  4. Pour the vegetable broth into the skillet with the garlic and ginger. Bring it to a gentle simmer. Add the peanut butter to the simmering broth. Whisk continuously until the peanut butter is fully melted and incorporated into the broth, creating a smooth, creamy base. If using, whisk in the nutritional yeast at this stage for an extra layer of umami.

  5. Add the drained ramen noodles to the skillet with the creamy peanut sauce. Toss everything together gently until the noodles are thoroughly coated in the sauce. If the sauce seems too thick, you can add a tablespoon or two of the reserved noodle cooking water (if you saved any) or a splash more vegetable broth to reach your desired consistency.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat gently in a skillet with a splash of water or broth, or microwave, stirring halfway through.
