Ingredients
  

Base Ingredients
  • 1 cup Instant Cream of Rice cereal
  • 4 cups Water or Milk (or a mix) Use milk for extra creaminess
  • 1/4 teaspoon Salt
Flavoring & Toppings
  • 1 teaspoon Vanilla Extract
  • 1 teaspoon Ground Cinnamon Divided, half for cooking, half for topping
  • 2 tablespoons Brown Sugar or Maple Syrup Adjust to taste

Method
 

Instructions
  1. In a medium saucepan, combine the water (or milk/water mixture) and salt.
  2. Bring the liquid to a rolling boil over medium-high heat.
  3. Slowly whisk in the Cream of Rice cereal while the liquid is boiling, ensuring no lumps form. Continue whisking constantly for about 1 to 2 minutes until the mixture thickens considerably.
  4. Reduce the heat to low. Stir in the vanilla extract and half of the ground cinnamon. Cook for an additional 2-3 minutes, stirring occasionally, until the desired thickness is achieved.
  5. Remove the saucepan from the heat.
  6. Divide the Cream of Rice into two serving bowls. Sprinkle the remaining ground cinnamon and desired sweetener (brown sugar or maple syrup) over the top of each bowl before serving hot.

Notes

For a richer flavor, use whole milk instead of water. You can also toast the dry cereal slightly in the saucepan before adding the liquid to enhance the nutty undertones.
