  • 1 teaspoon vanilla extract
  • 4 cups Chex cereal (rice, corn, or a mix), any flavor
  • 1/4 cup powdered sugar
  • pink and red candy melts or white chocolate chips
  • Valentine's Day sprinkles (hearts, nonpareils, jimmies)
  • A pinch red or pink food coloring for candy melts
  • a tiny bit oil (like vegetable or coconut oil) if using white chocolate chips for drizzling

Method
 

  1. In a large microwave-safe bowl, combine the semisweet chocolate chips and peanut butter. Microwave on high in 30-second intervals, stirring well after each interval, until the chocolate and peanut butter are completely melted and smooth. Be careful not to overheat; this usually takes about 1 to 2 minutes total.

  2. Stir in the vanilla extract until it's fully incorporated into the melted chocolate and peanut butter mixture. This adds that classic Muddy Buddy aroma and flavor.

  3. Gently add the Chex cereal to the bowl with the melted chocolate and peanut butter mixture. Carefully toss the cereal with a spatula until each piece is evenly coated. Work quickly but gently to avoid crushing the cereal.

  4. Transfer the coated cereal into a large resealable plastic bag. This is where the magic of powdered sugar happens!
  5. Add the 1/4 cup of powdered sugar to the bag with the coated cereal. Seal the bag tightly, leaving a bit of air inside to help the sugar distribute.

  7. Spread the coated cereal in a single layer on a baking sheet lined with parchment paper or wax paper. Allow them to cool completely and set. This usually takes about 15-30 minutes at room temperature.
  8. If using, place the pink and red candy melts (or white chocolate chips) in a separate microwave-safe bowl. Microwave in 30-second intervals, stirring after each, until melted and smooth. If using white chocolate, you might need to add a tiny bit of oil (like vegetable or coconut oil) to achieve a smooth consistency for drizzling. You can also add a pinch of red or pink food coloring to the melted candy melts for a more vibrant Valentine's hue.

  9. Once the Muddy Buddies have cooled and set, drizzle the melted candy melts or white chocolate over the top of the cereal. Immediately sprinkle with your Valentine's Day sprinkles while the chocolate is still wet.
