Ingredients
  

  • 6 cups Chex cereal (corn or rice, or a mix)
  • 1 cup semi-sweet chocolate chips
  • 1/2 cup creamy peanut butter
  • 1/4 cup unsalted butter
  • 1 teaspoon vanilla extract
  • 1 1/2 cups powdered sugar
  • Assorted Valentine's Day sprinkles (heart shapes, pink, red, white)
  • Red or pink candy melts for drizzling (optional)

Method
 

  1. Line a large baking sheet with parchment paper or wax paper. This will prevent the Muddy Buddies from sticking and make cleanup a breeze.
  2. In a large microwave-safe bowl, combine the semi-sweet chocolate chips, creamy peanut butter, and unsalted butter. Microwave on high power in 30-second intervals, stirring well after each interval, until the mixture is smooth and completely melted. Be careful not to overheat, as this can cause the chocolate to seize.

  3. Once the chocolate mixture is smooth, stir in the vanilla extract until fully incorporated. This adds a lovely fragrant depth to the coating.

  4. Pour the Chex cereal into a very large bowl. Pour the melted chocolate and peanut butter mixture over the cereal. Gently stir with a spatula until all the cereal pieces are evenly coated. Work quickly but gently to avoid crushing the cereal.

Add the powdered sugar to the bag, seal it tightly, and shake vigorously until the cereal is well coated. Alternatively, continue stirring with a spatula in the large bowl until all pieces are coated. You might need to break up clumps of powdered sugar.

Notes

Properly stored Valentine's Day Muddy Buddies will stay fresh and delicious for up to two weeks. For optimal freshness, store them in an airtight container at cool room temperature. Avoid storing them in direct sunlight or warm places, as the chocolate coating can melt. If you live in a particularly warm climate, you might consider storing them in the refrigerator, but be aware that this can sometimes affect the texture slightly.
Reheating is generally not necessary for Muddy Buddies as they are enjoyed at room temperature.
