- Line a large baking sheet with parchment paper or wax paper. This will prevent the Muddy Buddies from sticking and make cleanup a breeze.
- In a large microwave-safe bowl, combine the semi-sweet chocolate chips, creamy peanut butter, and unsalted butter. Microwave on high power in 30-second intervals, stirring well after each interval, until the mixture is smooth and completely melted. Be careful not to overheat, as this can cause the chocolate to seize.1 cup semi-sweet chocolate chips, 1/2 cup creamy peanut butter, 1/4 cup unsalted butter
- Once the chocolate mixture is smooth, stir in the vanilla extract until fully incorporated. This adds a lovely fragrant depth to the coating.1 teaspoon vanilla extract
- Pour the Chex cereal into a very large bowl. Pour the melted chocolate and peanut butter mixture over the cereal. Gently stir with a spatula until all the cereal pieces are evenly coated. Work quickly but gently to avoid crushing the cereal.6 cups Chex cereal (corn or rice, or a mix)
- Add the powdered sugar to the bowl with the coated cereal.1 1/2 cups powdered sugar
- For the easiest and most effective coating with powdered sugar, you can try transferring the mixture to a large zip-top bag. Add the powdered sugar to the bag, seal it tightly, and shake vigorously until the cereal is well coated. Alternatively, continue stirring with a spatula in the large bowl until all pieces are coated. You might need to break up clumps of powdered sugar.1 1/2 cups powdered sugar

- Allow the Valentine's Day Muddy Buddies to set completely at room temperature for about 15-30 minutes, or until the chocolate coating is firm.
- If you're feeling extra festive, melt some red or pink candy melts according to package directions and drizzle over the set Muddy Buddies for an added pop of color and sweetness. Let the drizzle set before serving or storing.Red or pink candy melts for drizzling (optional)
Notes
Properly stored Valentine's Day Muddy Buddies will stay fresh and delicious for up to two weeks. For optimal freshness, store them in an airtight container at cool room temperature. Avoid storing them in direct sunlight or warm places, as the chocolate coating can melt. If you live in a particularly warm climate, you might consider storing them in the refrigerator, but be aware that this can sometimes affect the texture slightly.
Reheating is generally not necessary for Muddy Buddies as they are enjoyed at room temperature. However, if you find they have become a bit stale or you want to re-melt any drizzled candy melts, you can gently warm them. For the drizzled candy melts, a very short stint in a low oven (around 200°F or 93°C) for a few minutes can help re-soften them, but watch closely to prevent burning. Freezing is also an option; place cooled Muddy Buddies in a freezer-safe bag or container and they can be frozen for up to 2-3 months. Thaw them at room temperature before enjoying.
