Ingredients

  • 1 cup sour cream
  • 1 packet (1 ounce) taco seasoning mix
  • 1 ½ cups shredded cheddar cheese (or a Mexican blend)
  • 1 cup salsa (your favorite kind)
  • ½ cup chopped black olives (canned, drained)
  • 1 cup diced tomatoes (fresh or canned, drained)
  • ½ cup chopped fresh cilantro (optional, for garnish)
  • green onions, thinly sliced (optional, for garnish)

Method
 

  1. In a medium bowl, combine the two cans of refried beans with half of the taco seasoning packet. Mix thoroughly until the seasoning is evenly distributed. Spread this bean mixture in a thin, even layer at the bottom of a 9x13 inch baking dish or a similar sized shallow serving dish. Press gently with the back of a spoon to create a compact base.

  2. In a separate bowl, combine the sour cream with the remaining half of the taco seasoning packet. Stir well until the seasoning is fully incorporated into the sour cream, creating a flavorful, creamy mixture. With a spoon, carefully spread this seasoned sour cream evenly over the refried bean layer. Try to avoid disturbing the beans as much as possible.

  3. Sprinkle the shredded cheddar cheese (or your chosen Mexican blend) evenly over the sour cream layer. Ensure there are no bare spots, as this layer will melt and bind the dip together beautifully.

  4. Spoon your favorite salsa over the cheese layer. Gently spread it out, covering the cheese as much as possible. You can use mild, medium, or hot salsa, depending on your preference and your guests' taste buds.

Notes

This dip can be refrigerated for up to 2-3 days. Reheat in the oven at 350°F (175°C) for 15-20 minutes, or microwave individual portions. Freezing is not recommended.
