- In a large skillet over medium-high heat, brown the ground beef or turkey, breaking it up with a spoon. Once browned, drain off any excess grease. Add the chopped onion to the skillet and cook until softened, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant. This step is crucial for building the foundational flavor of your chili.1 pound ground beef or ground turkey, 1 large onion, 2 cloves garlic
- Transfer the browned meat mixture to your slow cooker. Add the crushed tomatoes, drained and rinsed kidney beans, drained and rinsed black beans, and the undrained can of diced tomatoes with green chilies. If using, add the diced mild green chilies.1 (28 ounce) can crushed tomatoes, 1 (15 ounce) can kidney beans, 1 (15 ounce) can black beans, 1 (10 ounce) can diced tomatoes with green chilies (like Rotel), 1 (4 ounce) can mild green chilies
- Sprinkle in the chili powder, cumin, smoked paprika, cayenne pepper, and dried oregano. Season generously with salt and freshly ground black pepper. If you prefer a thinner chili, pour in the beef broth or water now. Stir everything together well, ensuring the spices are evenly distributed.2 tablespoons chili powder, 1 teaspoon cumin, 1/2 teaspoon smoked paprika, 1/4 teaspoon cayenne pepper, 1 teaspoon dried oregano, to taste salt and freshly ground black pepper, 1 cup beef broth or water
- Cover the crockpot and cook on Low for 6-8 hours or on High for 3-4 hours. The longer it cooks on Low, the more the flavors will meld and deepen.
