Ingredients
  

  • 1 cup Full-fat Cottage Cheese (about 8 ounces)
  • 1/2 cup Almond Flour (or other finely ground nut flour like coconut flour or oat flour for a different texture/flavor)

  • Medium-sized mixing bowl

Method
 

  1. Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper to prevent any sticking and ensure easy cleanup.
  2. In a medium-sized mixing bowl, combine the full-fat cottage cheese and the almond flour. Mix thoroughly until they form a cohesive dough-like mixture. Mash and blend them together with a spatula or your hands.

  3. Take small portions of the mixture (about a tablespoon each) and roll them between your palms to create small, cylindrical or oval shapes. Lightly dust your hands with almond flour if the mixture is sticky, but avoid adding too much.

  4. Carefully place the formed tots onto the prepared baking sheet, leaving a little space between each one.
  5. Place the baking sheet in the preheated oven and bake for approximately 15-20 minutes, or until the tots are golden brown and slightly firm to the touch. You can flip them halfway through baking for an even crispier exterior.
  6. Remove the tots from the oven and let them cool on the baking sheet for a few minutes before serving.

Notes

Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in oven or toaster oven at 350°F (175°C) for 5-7 minutes. Can be frozen for up to 2-3 months.
