- Preheat your oven to 400°F (200°C). Line a baking sheet with parchment paper for easy cleanup.
- In a medium bowl, place the chilled cottage cheese. Add half of the all-purpose flour (1/4 cup). Using a fork or a spatula, begin to mix the cottage cheese and flour together. It will start to form a sticky dough.1 cup Full-fat Cottage Cheese, 1/2 cup All-purpose Flour
- Gradually add the remaining 1/4 cup of flour, mixing until a cohesive, manageable dough forms. If the dough is still too sticky to handle after adding all the flour, add an additional tablespoon of flour at a time until it’s no longer sticking excessively to your hands and the bowl. The key is to achieve a dough that you can shape without it falling apart or being overly sticky.1/2 cup All-purpose Flour
- Lightly dust your hands with a bit of all-purpose flour to prevent sticking. Take about a tablespoon-sized portion of the dough and roll it between your palms to form a small, tot-like shape, similar to a mini log or finger. Aim for uniformity in size so they bake evenly.1/2 cup All-purpose Flour
- Carefully place the shaped tots onto the prepared baking sheet, leaving a little space between each one.
- Place the baking sheet in the preheated oven. Bake for 20-25 minutes, or until the Two Ingredient Cottage Cheese Tots are golden brown around the edges and slightly puffed. You can flip them halfway through baking for more even browning if desired.
- Once baked to perfection, remove the tots from the oven. Let them cool slightly on the baking sheet before serving.
Notes
Store leftovers in an airtight container in the refrigerator for up to 3-4 days. Reheat in an oven or toaster oven at 350°F (175°C) for 5-7 minutes for best texture. Avoid microwaving if crispness is desired.
