- If you’re using whole lobsters, cook them first (boiling or steaming are common methods). Once cooked, remove the meat from the tail and claws, ensuring no shell fragments remain. Chop the lobster meat into bite-sized pieces. If using pre-cooked lobster meat, simply chop it. Set aside.1 lb lobster meat (cooked, from 1-2 lobsters)
- In a large skillet or saucepan, melt the unsalted butter with the olive oil over medium heat. Add the finely minced shallot and sauté until softened and translucent, about 3-4 minutes. Don't let it brown.2 tablespoons unsalted butter, 1 tablespoon olive oil, 1 medium shallot
- Add the minced garlic to the skillet and cook for another minute until fragrant, being careful not not to burn it.2 cloves garlic
- Pour in the dry white wine. Scrape the bottom of the pan with a wooden spoon to loosen any browned bits. Let the wine simmer and reduce by about half, which should take 2-3 minutes. This step concentrates the flavor.1/4 cup dry white wine
- Add the lobster broth (or fish stock) to the skillet. Bring the mixture to a gentle simmer and let it cook for about 5-7 minutes, allowing the flavors to meld.1 cup lobster broth or fish stock
- Reduce the heat to low. Stir in the heavy cream and the fresh lemon juice. Continue to stir gently until the sauce is smooth and slightly thickened. Avoid boiling the sauce once the cream is added, as it can cause it to curdle.1/2 cup heavy cream, 1 tablespoon fresh lemon juice
- Season the sauce generously with salt and freshly ground black pepper to taste. Remember that lobster can be naturally salty, so taste as you go.to taste salt, to taste freshly ground black pepper
- Gently add the chopped lobster meat to the sauce. Stir to coat the lobster evenly. Let it warm through for 1-2 minutes, just enough to heat the lobster without overcooking it (overcooked lobster becomes tough).1 lb lobster meat (cooked, from 1-2 lobsters)
- While the sauce is warming, bring a large pot of salted water to a rolling boil. Add your chosen pasta and cook according to package directions until al dente. Reserve about 1/2 cup of the pasta cooking water before draining.12 oz pasta of your choice, for pasta water salt
- Drain the pasta and return it to its pot or add it directly to the skillet with the lobster sauce. Toss the pasta gently with the sauce until every strand is beautifully coated. If the sauce seems a little too thick, add a splash of the reserved pasta cooking water to loosen it to your desired consistency.1 tablespoon olive oil or butter
- Serve the Best Lobster Sauce for Pasta immediately, garnished with fresh chopped parsley.1 tablespoon fresh parsley
Notes
Allow the pasta and sauce to cool completely. Transfer any leftovers to an airtight container. The dish can be stored in the refrigerator for up to 2-3 days. Reheat gently on the stovetop over low to medium-low heat, stirring frequently. Add a tablespoon or two of water or milk to loosen the sauce if needed. Heat until warmed through, being careful not to boil.
