Sandwich Components
  • 4 slices bread (brioche buns, ciabatta rolls, or sourdough work wonderfully)
  • 2 tablespoons mayonnaise (or Greek yogurt for a lighter option)
  • 1 tablespoon Dijon mustard
  • 1/2 teaspoon honey (optional, for a touch of sweetness)
  • Lettuce leaves (romaine, butter, or green leaf)
  • Tomato slices
  • Red onion (optional, thinly sliced)
  • Pickles (dill or bread and butter), sliced (optional)
  • Cheese slices (provolone, Swiss, or cheddar, optional)

Equipment

  • Medium Bowl
  • Grill pan or outdoor grill
  • Small Bowl
  • Cutting Board

Method

  1. In a medium bowl, whisk together the olive oil, lemon juice, garlic powder, paprika, oregano, salt, and pepper. Add the chicken breasts to the marinade, ensuring they are fully coated. Cover the bowl and let the chicken marinate at room temperature for at least 15 minutes, or refrigerate for up to 2 hours for deeper flavor.
2 tablespoons olive oil, 1 tablespoon lemon juice, 1 teaspoon garlic powder, 1 teaspoon paprika, 1/2 teaspoon dried oregano, to taste salt, to taste freshly ground black pepper
  2. While the chicken marinates, preheat your grill (indoor grill pan or outdoor grill) to medium-high heat. Lightly oil the grill grates to prevent sticking.
  3. Remove the chicken breasts from the marinade, letting any excess drip off. Place the chicken on the preheated grill. Cook for 6-8 minutes per side, or until the chicken is cooked through and reaches an internal temperature of 165°F (74°C). The grill marks should be beautiful and golden brown. Once cooked, remove the chicken from the grill and let it rest on a clean cutting board for 5 minutes before slicing. This resting period is crucial for juicy chicken.

  4. While the chicken rests, in a small bowl, combine the mayonnaise (or Greek yogurt), Dijon mustard, and honey (if using). Stir until well combined and smooth. This simple sauce adds a delightful creaminess and tang to the sandwich.
2 tablespoons mayonnaise, 1 tablespoon Dijon mustard, 1/2 teaspoon honey
  5. Lightly toast your chosen bread slices on the grill, in a toaster, or under the broiler until golden brown. This adds a pleasant crunch and prevents the bread from becoming soggy.
