Ingredients
  

For the Salmon
  • 1.5 lbs salmon fillets, skin removed and cut into 1-inch cubes
  • 1 tablespoon olive oil
  • 1 teaspoon chili powder
  • 1/2 teaspoon cumin
  • 1/4 teaspoon garlic powder
  • 1/4 teaspoon onion powder
  • 1/4 teaspoon smoked paprika
  • salt and freshly ground black pepper to taste
For the Zesty Slaw
  • 1/2 head green cabbage, thinly sliced about 4 cups
  • 1/4 head red cabbage, thinly sliced about 2 cups
  • 1 large carrot, peeled and shredded
  • 1/4 cup chopped fresh cilantro
  • 2 tablespoons mayonnaise
  • 1 tablespoon lime juice from about 1/2 lime
  • 1 teaspoon honey or agave nectar
  • 1/2 teaspoon Dijon mustard
  • salt and freshly ground black pepper to taste
For the Tacos
  • 8-12 small corn or flour tortillas
  • Optional Toppings Avocado slices, pico de gallo, sour cream or Greek yogurt, lime wedges, hot sauce

Method
 

  1. In a medium bowl, combine the salmon cubes, olive oil, chili powder, cumin, garlic powder, onion powder, smoked paprika, salt, and pepper. Toss gently to ensure each piece of salmon is evenly coated with the spices and oil.

  2. Preheat your air fryer to 400°F (200°C).
  3. Arrange the seasoned salmon cubes in a single layer in the air fryer basket. Avoid overcrowding the basket; cook in batches if necessary to ensure even cooking and crisping.
  4. Air fry for 6-10 minutes, or until the salmon is cooked through and flakes easily with a fork. The exact time will depend on the size of your salmon cubes and your air fryer model.
  5. While the salmon is cooking, prepare the slaw. In a large bowl, combine the thinly sliced green cabbage, red cabbage, shredded carrot, and chopped cilantro.

  6. In a small bowl, whisk together the mayonnaise, lime juice, honey or agave nectar, Dijon mustard, salt, and pepper until well combined and creamy.

  7. Pour the dressing over the cabbage and carrot mixture. Toss gently until all the vegetables are evenly coated with the zesty dressing.
  8. Let the slaw sit for at least 10 minutes, allowing the flavors to meld and the vegetables to slightly soften.
  9. Warm the tortillas according to package instructions. This can be done in a dry skillet, in the microwave, or briefly in the air fryer.
