- Bring a large pot of salted water to a rolling boil. Add the cheese tortellini and cook according to package directions until al dente. Drain the tortellini thoroughly and rinse with cool water to stop the cooking and prevent sticking. Set aside in a large mixing bowl.1 (16-ounce) package cheese tortellini
- While the tortellini is cooking, finely chop your deli ham, salami, and turkey into bite-sized pieces. Add these chopped meats to the bowl with the tortellini. Next, halve or quarter the cherry tomatoes, halve the Kalamata olives, finely chop the red onion and green bell pepper, and chop the pepperoncini peppers (if using). Add all these prepared vegetables to the bowl.1/2 pound sliced deli ham, chopped, 1/2 pound sliced deli salami, chopped, 1/2 pound sliced deli turkey, chopped, 1 cup cherry tomatoes, halved or quartered, 1/2 cup Kalamata olives, pitted and halved, 1/4 cup chopped red onion, 1/4 cup chopped green bell pepper, 1/4 cup chopped pepperoncini peppers
- In a separate small bowl or jar, whisk together the mayonnaise, red wine vinegar, Dijon mustard, and dried oregano. Season generously with salt and freshly ground black pepper. - Pour the prepared dressing over the tortellini mixture in the large bowl. Add the grated Parmesan cheese. Gently toss all the ingredients together until everything is evenly coated with the dressing. Ensure the tortellini, meats, and vegetables are well distributed.1/2 cup grated Parmesan cheese
