Ingredients
  

  • 1 pound Ground Beef 80/20 or 90/10 recommended
  • 1 tablespoon Olive Oil
  • 1 Yellow Onion medium, finely chopped
  • 2 cloves Garlic cloves, minced
  • 1 packet (1 ounce) Taco Seasoning packet
  • 2/3 cup Water
  • 1 can (15 ounces) Refried Beans can, warmed
  • 2 cups Cooked Rice white or brown
  • 1 bag (about 5 ounces) Nacho Cheese Doritos bag, crushed
  • 1 cup Shredded Iceberg Lettuce
  • 1/2 cup Diced Tomatoes
  • 1/4 cup Diced Red Onion
  • 1/4 cup Sliced Black Olives
  • 1/2 cup Shredded Cheddar Cheese
  • Sour Cream for serving
  • Salsa for serving
  • Chopped Cilantro optional topping
  • Pickled Jalapeños optional topping
  • Avocado Slices optional topping

Equipment

Method
 

  1. Heat the olive oil in a large skillet or Dutch oven over medium-high heat. Add the ground beef and cook, breaking it up with a spoon, until it's browned and no pink remains. Drain off any excess grease.

  2. Add the finely chopped yellow onion to the skillet with the browned beef. Cook, stirring occasionally, until the onion is softened and translucent, about 5-7 minutes. Stir in the minced garlic and cook for another minute until fragrant, being careful not to burn it.

  3. Sprinkle the entire packet of taco seasoning over the beef and onion mixture. Pour in the water and stir everything together until well combined, ensuring all the meat is coated with the seasoning.

  4. Bring the mixture to a simmer, then reduce the heat to low, cover, and let it cook for about 10 minutes. This allows the flavors to meld and the sauce to thicken slightly. Stir occasionally.
  5. While the taco meat is simmering, ensure your rice is cooked and warm. You can cook it fresh according to package directions or reheat pre-cooked rice.

  6. In a small saucepan or microwave-safe bowl, gently warm the refried beans until they are smooth and heated through.

  7. Open the bag of Nacho Cheese Doritos and generously crush them. You can do this by hand in the bag or by placing them in a zip-top bag and lightly crushing them with a rolling pin. Aim for a mix of larger crumbles and finer pieces for varied texture.

  8. To assemble, start with a base of warm rice in each bowl. Spoon a generous serving of the seasoned taco meat over the rice. Next, add a dollop of the warm refried beans.

  9. Top the meat and beans with shredded iceberg lettuce, diced tomatoes, diced red onion, and sliced black olives. Sprinkle the shredded cheddar cheese over all the toppings.

  10. Finally, generously sprinkle the crushed Nacho Cheese Doritos over the very top of each bowl.

  11. Serve immediately with dollops of sour cream and salsa on the side for guests to add as they please. Add any other desired optional toppings like fresh cilantro, pickled jalapeños, or avocado slices.
