  • 1 tablespoon sesame oil
  • 1 pound boneless, skinless chicken thighs or breasts cut into 1-inch pieces
  • 1 small yellow onion thinly sliced
  • 2 cloves garlic minced
  • 1-inch piece fresh ginger grated
  • 1 cup fresh pineapple chunks (or canned, drained)
  • 1/4 cup soy sauce (or tamari for gluten-free)
  • 2 tablespoons brown sugar
  • 1 tablespoon rice vinegar
  • 1 teaspoon cornstarch dissolved in 2 tablespoons water
  • 1/4 cup chicken broth
  • to taste salt
  • to taste black pepper
  • Cooked white or brown rice for serving

Method
 

  1. In a small bowl, whisk together the soy sauce, brown sugar, rice vinegar, and chicken broth. Set aside.

  2. Heat the sesame oil in a large skillet or wok over medium-high heat. Add the chicken pieces in a single layer, ensuring not to overcrowd the pan. Season with salt and pepper. Cook for 4-5 minutes per side, until browned and cooked through. Remove the chicken from the skillet and set aside on a plate.

  3. Add the thinly sliced onion to the same skillet. Cook for 3-4 minutes, stirring occasionally, until softened and slightly translucent. Add the minced garlic and grated ginger, and cook for another minute until fragrant, being careful not to burn them. Stir in the fresh pineapple chunks and cook for 2-3 minutes, allowing them to soften and release some of their juices.

  4. Return the cooked chicken to the skillet with the onions and pineapple. Pour the prepared sauce mixture over the chicken and vegetables. Bring the sauce to a gentle simmer.
