Sweet Potatoes
  • 2 large sweet potatoes peeled and cut into 1-inch cubes
Green Beans
  • 1 pound fresh green beans trimmed
Onion
  • 1 large red onion cut into 1-inch wedges
Olive Oil
  • 3 tablespoons olive oil divided
Spices
  • 1 teaspoon smoked paprika
  • 1/2 teaspoon garlic powder
  • to taste salt
  • to taste freshly ground black pepper
Optional Toppings
  • 1/4 cup crumbled feta cheese or grated Parmesan cheese
  • as needed fresh parsley chopped, for garnish

Method
 

  1. Preheat your oven to 400°F (200°C). While the oven heats, grab a large baking sheet. In a large bowl, combine the cubed sweet potatoes, trimmed green beans, and red onion wedges.

  2. Drizzle 2 tablespoons of the olive oil over the vegetables in the bowl. Sprinkle the smoked paprika, garlic powder, salt, and pepper over the top. Toss everything together thoroughly with your hands or a spatula, ensuring each piece of vegetable is evenly coated with the oil and seasonings.

  3. Spread the seasoned vegetables in a single layer on the prepared baking sheet. Try to avoid overcrowding the pan, as this will steam the vegetables rather than roast them, preventing that delicious caramelization. If necessary, use two baking sheets.
  4. Place the baking sheet in the preheated oven and roast for 20-25 minutes, or until the sweet potatoes are tender and slightly caramelized, and the green beans are bright green and crisp-tender.
  5. During the last 5 minutes of roasting, you can drizzle the remaining 1 tablespoon of olive oil over the vegetables and toss them gently on the pan for extra shine and flavor. If you're adding cheese, sprinkle it evenly over the vegetables during this final stage and allow it to melt and become slightly golden.
