Ingredients
  

  • 1 cup rolled oats ensure they are gluten-free if needed
  • 1/2 cup vanilla or unflavored protein powder whey, casein, or plant-based work well
  • 1/4 cup natural peanut butter or almond butter creamy or crunchy, your choice!
  • 2 tablespoons honey or maple syrup adjust to your preferred sweetness
  • 2 tablespoons milk or unsweetened almond milk add more if needed for consistency
  • 1 teaspoon vanilla extract
  • 1/4 cup rainbow sprinkles for that festive birthday cake flair!
  • 1-2 tablespoons white chocolate chips or shredded coconut optional

  1. In a medium-sized mixing bowl, add the rolled oats and protein powder. Whisk them together thoroughly to ensure the protein powder is evenly distributed throughout the oats. This prevents pockets of unmixed powder in your final protein balls.

  2. To the same bowl, add the peanut butter (or almond butter), honey (or maple syrup), milk (or almond milk), and vanilla extract. If you're using white chocolate chips or shredded coconut, add them now as well.

  3. Using a sturdy spoon or a spatula, begin to mix all the ingredients together. You'll want to mash and fold until a thick, cohesive dough forms. It should be sticky enough to hold together but not so wet that it’s unmanageable. If the mixture seems too dry and crumbly, add another teaspoon of milk at a time until it reaches the desired consistency. If it’s too wet, you can add a touch more oats or protein powder.

  4. Once the dough has reached a good consistency, it's time for the fun part! Gently fold in the rainbow sprinkles until they are evenly distributed throughout the mixture. Be careful not to overmix at this stage, as it can cause the colors of the sprinkles to bleed slightly, although this doesn't affect the taste.

  5. Take about a tablespoon of the dough at a time and roll it between the palms of your hands to form small, bite-sized balls. The warmth of your hands will help the mixture hold its shape. Continue this process until all the dough has been used.
  6. Place the rolled protein balls on a plate or baking sheet lined with parchment paper. Pop them into the refrigerator for at least 15-30 minutes.
