  • 1/2 cup rolled oats not instant
  • 1 scoop vanilla or unflavored protein powder approximately 30g
  • 1 cup unsweetened almond milk or milk of your choice
  • 1 tablespoon chia seeds
  • 1/2 teaspoon sugar cookie extract optional, but highly recommended for authentic flavor
  • 1/4 teaspoon almond extract optional, enhances nuttiness
  • 1-2 teaspoons sweetener of choice maple syrup, honey, stevia, adjust to taste
  • Pinch salt

Method
 

  1. In a jar, bowl, or airtight container, add the rolled oats, protein powder, chia seeds, and salt. Stir these dry ingredients together thoroughly to ensure the protein powder is evenly distributed and there are no clumps. This is crucial for a smooth texture later on.

  2. Pour in the unsweetened almond milk. Add the sugar cookie extract, almond extract (if using), and your chosen sweetener.

  4. Cover the container tightly with a lid or plastic wrap. Place the jar or bowl in the refrigerator and let it chill for at least 4 hours, but ideally overnight. This allows the oats and chia seeds to absorb the liquid, creating a thick, pudding-like consistency.
  5. In the morning, give your Sugar Cookie Protein Overnight Oats a good stir. If the mixture is too thick for your liking, add a splash more milk until it reaches your desired consistency. Top with your favorite sugar cookie crumbles, sprinkles, fresh berries, or a dollop of whipped cream for an extra special treat.

Notes
