Ingredients
  

  • 1.5 cups fresh strawberries, hulled and roughly chopped
  • 1 cup plain Greek yogurt (full-fat or 2% recommended for creaminess)
  • 2 tablespoons honey or maple syrup (adjust to your sweetness preference)
  • 1 teaspoon vanilla extract

  • A drizzle melted dark chocolate

Method
 

  1. Begin by washing and thoroughly drying your fresh strawberries. Remove the green leafy tops (hull them) and chop the strawberries into smaller, bite-sized pieces. This will make them easier to blend and ensure even distribution throughout the yogurt mixture.

  2. In a blender or food processor, add the chopped strawberries, plain Greek yogurt, honey (or maple syrup), and vanilla extract. If you're using chia seeds or any other dry additions that you want integrated into the mixture, you can add them now.

  3. Pulse the blender until the mixture is mostly smooth. You can leave some very small strawberry chunks for a bit of texture if you prefer, or blend until completely velvety. Taste the mixture and adjust the sweetness by adding a little more honey or maple syrup if desired.

  4. Line a baking sheet with parchment paper or a silicone baking mat. This prevents the bites from sticking. Using a spoon or a small cookie scoop, drop small dollops of the strawberry yogurt mixture onto the prepared baking sheet. Aim for bite-sized portions, roughly 1-2 tablespoons each.
  5. If you’re using any additional toppings like a light dusting of poppy seeds or a few extra chia seeds for decoration, now is the time to gently press them onto the surface of each yogurt bite.

  6. Carefully place the baking sheet into the freezer. Allow the Strawberry Yogurt Bites to freeze for at least 2-3 hours, or until they are completely firm and solid to the touch.
  7. Once frozen, you can serve the Strawberry Yogurt Bites immediately. If you made more than you can eat in one sitting, transfer them to a freezer-safe container or bag for later enjoyment.

Notes

Store in an airtight container in the freezer for up to 1 month. Do not reheat. If softened, refreeze.
