Prep Time 25 minutes
Maceration Time 15 minutes
Course: Dessert

Ingredients

  • fresh strawberries hulled and quartered
  • 2 tablespoons granulated sugar for strawberries, plus more to taste
  • 2 tablespoons lemon juice optional, for strawberries
  • angel food cake store-bought or homemade, cut into 1-inch cubes
  • 1 1/2 cups heavy whipping cream
  • 1/4 cup powdered sugar
  • 1/2 teaspoon vanilla extract
  • extra whipped cream optional garnish
  • mint sprigs optional garnish
  • sliced almonds optional garnish

Equipment

  • Medium Bowl
  • Large, chilled bowl
  • Electric mixer or whisk
  • Clear glasses, jars, or small bowls

Method

  1. In a medium bowl, combine the quartered strawberries with 2 tablespoons of granulated sugar and the optional lemon juice. Gently stir to coat the strawberries. Let them sit at room temperature for at least 15-20 minutes, stirring occasionally. This process, known as maceration, will draw out the juices from the strawberries, creating a delightful syrup that will infuse the entire dessert with flavor. Taste the strawberries and add a little more sugar if they aren't sweet enough for your liking.

  2. While the strawberries are macerating, prepare your whipped cream. In a large, chilled bowl, combine the heavy whipping cream, ¼ cup of powdered sugar, and ½ teaspoon of vanilla extract. Using an electric mixer or a whisk, beat the cream on medium-high speed until stiff peaks form. Be careful not to overbeat, as this can turn the cream into butter. You want it light, fluffy, and able to hold its shape.
1 1/2 cups heavy whipping cream, 1/4 cup powdered sugar, 1/2 teaspoon vanilla extract
  3. Now for the fun part – layering! You’ll need clear glasses, jars, or even small bowls for your dessert cups. Start by placing a layer of cubed angel food cake at the bottom of each cup. You can gently press them down to create a stable base.

  4. Spoon a generous amount of the macerated strawberries, along with some of their delicious syrupy juices, over the layer of cake in each cup. Ensure you get a good mix of berries and their flavorful liquid.

  5. Dollop or pipe a cloud of the freshly whipped cream on top of the strawberries. Make it as decorative or as simple as you like! This creamy layer balances the tartness of the berries and the sweetness of the cake beautifully.

  6. If your cups are deep enough, you can repeat the layers: another layer of cake, more strawberries and juice, and finally, another dollop of whipped cream. This creates a more substantial and visually impressive dessert.

  7. For an extra touch of elegance, garnish your Strawberry Shortcake Dessert Cups with a few extra whole or sliced strawberries, a sprinkle of chopped almonds, or a fresh mint sprig. Serve immediately for the best texture and flavor experience.

Notes

The cake will begin to soften and become mushy over time due to the moisture from the strawberries and whipped cream.
For optimal freshness, store components separately.
