  • 2 cups Fresh Strawberries Diced
  • 1.5 cups Fresh Pineapple Diced
  • 1/2 cup Red Onion Finely minced
  • 1 large Jalapeño Pepper Seeded and minced (adjust to taste)
  • 1/4 cup Fresh Cilantro Chopped
  • 1 large Lime Juice Freshly squeezed
  • 1 tablespoon Honey or Agave Nectar Optional, for extra sweetness
  • 1/4 teaspoon Salt Or to taste

Instructions
  1. Prepare all the fruit and vegetables: dice the strawberries, dice the pineapple into small, uniform pieces, finely mince the red onion, and mince the jalapeño (remembering to remove seeds for less heat).
  2. In a medium-sized mixing bowl, combine the diced strawberries, diced pineapple, minced red onion, minced jalapeño, and chopped cilantro.
  3. In a separate small bowl, whisk together the fresh lime juice, salt, and optional honey or agave nectar until well combined.
  4. Pour the lime juice mixture over the fruit and vegetable mixture. Gently fold all ingredients together until evenly coated. Be careful not to mash the fruit.
  5. Taste the salsa and adjust seasoning if necessary. Add more salt for flavor enhancement or a tiny bit more lime juice for tang.
  6. For the best flavor, cover the salsa and refrigerate for at least 15 minutes (up to 2 hours) before serving. This allows the flavors to meld together perfectly. Serve chilled.

Notes

This salsa is excellent served over grilled chicken or white fish. If making ahead, hold off on adding the lime juice until about 30 minutes before serving, as the acid can slightly soften the strawberries over a long period.
