Ingredients

  • 1 pound fresh strawberries hulled and quartered
  • 1 large cucumber peeled, seeded, and thinly sliced
  • 1/4 cup fresh mint leaves finely chopped
  • 2 tablespoons extra virgin olive oil
  • 1 tablespoon balsamic glaze or good quality balsamic vinegar
  • 1 teaspoon honey or maple syrup (optional, for a touch of sweetness)
  • 1 pinch salt
  • 1 pinch black pepper

Equipment

  • Mixing bowl
  • Small Bowl
  • Jar with a lid
  • Whisk
  • Salad Tongs

Method

  1. Start by washing your strawberries thoroughly. Remove the green tops (hull them) and then slice each strawberry into quarters. Next, take your large cucumber. For the best texture, it's recommended to peel it to remove the sometimes-tough outer skin. Then, slice it in half lengthwise and use a spoon to gently scoop out the seeds from the center. Once seeded, thinly slice the cucumber into rounds. Finally, gather your fresh mint leaves. Stack them up, roll them tightly, and finely chop them to release their aromatic oils.
1 pound fresh strawberries, 1 large cucumber, 1/4 cup fresh mint leaves
  2. In a medium-sized mixing bowl, gently combine the quartered strawberries and the thinly sliced cucumber. This creates the refreshing foundation of your salad.
1 pound fresh strawberries, 1 large cucumber
  3. Sprinkle the finely chopped fresh mint leaves over the strawberry and cucumber mixture. The mint will infuse the salad with its cooling aroma and distinctive flavor.
    1/4 cup fresh mint leaves
  4. In a separate small bowl or a jar with a lid, whisk together the extra virgin olive oil, balsamic glaze (or vinegar), and honey or maple syrup, if you're using it for a touch of sweetness. Add a pinch of salt and a pinch of freshly ground black pepper to season the dressing. Whisk or shake until all the ingredients are well combined and emulsified.
2 tablespoons extra virgin olive oil, 1 tablespoon balsamic glaze, 1 teaspoon honey, 1 pinch salt, 1 pinch black pepper
  5. Pour the prepared dressing evenly over the strawberry, cucumber, and mint mixture.
2 tablespoons extra virgin olive oil, 1 tablespoon balsamic glaze, 1 teaspoon honey
  6. Using a large spoon or salad tongs, gently toss the salad to ensure all the ingredients are lightly coated with the dressing. Be careful not to overmix, as this could bruise the strawberries.
  7. Your Strawberry Cucumber Mint Salad is now ready to be enjoyed! For the best flavor and texture, serve it immediately.

Notes

To keep your Strawberry Cucumber Mint Salad at its freshest, it’s best to store any leftovers in an airtight container in the refrigerator. The salad will typically stay fresh for 1-2 days. It's not recommended to freeze this salad as the texture of the strawberries and cucumber will become watery and unappealing upon thawing. Reheating is also not advised, as this dish is best served chilled. For optimal enjoyment, it’s ideal to make this salad in smaller batches that you can consume within a day or two.
