Ingredients

For the Cream of Rice
  • 1/2 cup Instant Cream of Rice cereal
  • 2 cups Milk (dairy or non-dairy) Whole milk recommended for creaminess
  • 1/4 cup Fresh Strawberries Finely pureed or mashed
  • 2 tablespoons Granulated Sugar Adjust to taste
  • 1/2 teaspoon Vanilla Extract
  • Pinch Salt
For Garnish (Optional)
  • 4 Fresh Strawberries Sliced
  • 1 tablespoon Whipped Cream Or a dollop of Greek yogurt

Method

Instructions
  1. Prepare the strawberries: In a small bowl, mash or briefly pulse 1/4 cup of fresh strawberries until a coarse puree forms. Set aside.
  2. Combine liquids: In a medium saucepan, combine the 2 cups of milk, sugar, vanilla extract, and salt. Heat over medium heat, stirring occasionally, until the mixture is steaming around the edges but not yet boiling.
  3. Cook the cereal: Gradually whisk in the instant Cream of Rice cereal into the hot milk mixture. Reduce the heat to low and continue stirring constantly for about 5-7 minutes, or until the cereal thickens to your desired consistency.
  4. Incorporate flavor: Remove the saucepan from the heat. Stir in the prepared strawberry puree until the mixture is uniformly pink and fully incorporated. Taste and add more sugar if necessary.
  5. Serve immediately: Divide the strawberry cream of rice evenly into two serving bowls.
  6. Garnish: Top each serving with sliced fresh strawberries and a dollop of whipped cream or yogurt before serving hot.

Notes

For an extra rich flavor, use heavy cream instead of milk for half of the liquid content. If using frozen strawberries, thaw them completely and drain before pureeing.
