Method
- In a clean jar or an airtight container, add the rolled oats and chia seeds. Stir them together to ensure they are well distributed.1/2 cup rolled oats, 1 tablespoon chia seeds
- Pour in your chosen milk, Greek yogurt, maple syrup (or honey), and vanilla extract.1 cup milk, 1/4 cup plain Greek yogurt, 1 tablespoon maple syrup or honey, 1/2 teaspoon vanilla extract
- Add the mashed or finely chopped strawberries directly into the oat mixture. If using frozen strawberries, you can mash them directly from frozen, and they will thaw overnight.1/4 cup fresh or frozen strawberries
- Stir all the ingredients together until everything is well combined. Make sure there are no dry pockets of oats or chia seeds.
- In a small bowl, whisk together the softened cream cheese with 1 tablespoon of milk until smooth and creamy. You may need to add a tiny bit more milk to reach a drizzly consistency, similar to a thick sauce.2 tablespoons cream cheese, 1 tablespoon milk
- If you are using the cheesecake layer, you have two options: Layered: Pour half of the oat mixture into your jar. Dollop or drizzle half of the cream cheese mixture over the oats. Then, add the remaining oat mixture and top with the rest of the cream cheese mixture. Mixed In: Gently fold the cream cheese mixture into the oat mixture until just combined, creating a marbled effect rather than a fully blended consistency. This adds little pockets of cheesecake creaminess.
- Secure the lid on your jar or container. Place it in the refrigerator for at least 4 hours, or preferably overnight, to allow the oats and chia seeds to absorb the liquid and thicken into a creamy pudding-like texture.
- In the morning, remove the overnight oats from the refrigerator. Give them a quick stir. Add your favorite toppings such as fresh strawberry slices, a sprinkle of graham cracker crumbs for that cheesecake crust feel, or a dollop of whipped cream.Fresh strawberries, graham cracker crumbs, whipped cream
Notes
These Strawberry Cheesecake Overnight Oats are best stored in an airtight container or jar in the refrigerator. They will stay fresh for up to 3-4 days.
While overnight oats are designed to be eaten cold, if you prefer a slightly warmer dish, you can gently reheat them in a microwave-safe bowl for 30-60 seconds.
For freezing, it's best to prepare the base overnight oats without the toppings. Portion them into individual freezer-safe containers and they can be frozen for up to 2 months. Thaw in the refrigerator overnight before enjoying.
