Ingredients

For the Salad
  • 2 lbs Yukon Gold Potatoes Cut into 1-inch cubes
  • 6 slices Thick-cut Bacon Cooked crisp and crumbled
  • 4 Hard-boiled Eggs Chopped
  • 1/2 cup Celery Finely diced
  • 1/4 cup Red Onion Very finely minced
  • 3 tablespoons Fresh Chives Chopped, for garnish and mixing
For the Dressing
  • 1 cup Mayonnaise Full fat recommended
  • 2 tablespoons Dijon Mustard
  • 2 tablespoons Apple Cider Vinegar
  • 1 tablespoon Worcestershire Sauce
  • 1 teaspoon Smoked Paprika
  • 1/2 teaspoon Garlic Powder
  • to taste Salt and Black Pepper

Method

Instructions
  1. Prepare the potatoes: Place the cubed potatoes in a large saucepan and cover with cold, salted water. Bring to a boil and cook for 15-20 minutes, or until easily pierced with a fork but not mushy. Drain immediately and set aside to cool slightly.
  2. Whisk the dressing: In a medium bowl, combine the mayonnaise, Dijon mustard, apple cider vinegar, Worcestershire sauce, smoked paprika, and garlic powder. Whisk until completely smooth. Season generously with salt and pepper to taste. Set aside.
  3. Combine main ingredients: In a very large bowl, gently combine the slightly cooled potatoes, chopped hard-boiled eggs, minced red onion, and diced celery.
  4. Dress and fold: Pour about two-thirds of the dressing over the potato mixture. Gently fold everything together until evenly coated. Add more dressing as needed until the desired creaminess is achieved. Be careful not to mash the potatoes.
  5. Incorporate bacon and chill: Fold in most of the crumbled bacon, reserving some for garnish. Cover the salad and refrigerate for at least 2 hours, allowing the flavors to meld.
  6. Serve: Before serving, give the potato salad a final gentle stir. Transfer to a serving dish, top with the reserved bacon crumbles and fresh chopped chives. Serve chilled.

Notes

For an extra steakhouse touch, you can roast the potatoes slightly after boiling for a crispier exterior before mixing. This salad tastes best when made at least a few hours ahead.
