Ingredients
  

  • 10 ounces frozen chopped spinach, thawed and squeezed dry
  • 8 ounces cream cheese, softened
  • 1/4 cup Greek yogurt (plain, full-fat or low-fat)
  • 1/4 cup mayonnaise
  • 1/2 cup grated Parmesan cheese, plus extra for topping
  • 1/4 cup shredded mozzarella cheese, plus extra for topping
  • 1 clove garlic, minced
  • 1/4 teaspoon salt, or to taste
  • 1/8 teaspoon black pepper, or to taste
Optional additions
  • pinch red pepper flakes for heat
  • 1 tablespoon chopped chives for freshness

Equipment

  • Baking dish (8x8 inch or similar)

Method
 

  1. Preheat your oven to 375°F (190°C). Lightly grease a small baking dish (an 8x8 inch dish or a similar sized oven-safe skillet works beautifully).
  2. In a medium mixing bowl, add the softened cream cheese. Beat the cream cheese until it's smooth and creamy.

  3. Add the plain Greek yogurt to the bowl with the cream cheese. Mix until well combined and the texture is uniform.

  4. Stir in the mayonnaise, grated Parmesan cheese, and shredded mozzarella cheese. Mix thoroughly until all the cheeses are incorporated into the creamy base.

  5. Add the minced garlic, salt, and black pepper to the mixture. If you’re using optional red pepper flakes or chives, add them now as well. Stir everything together until evenly distributed. Taste and adjust seasonings if needed.

  6. Gently fold in the well-squeezed dry chopped spinach. Ensure the spinach is evenly distributed throughout the cheese mixture.

  7. Spoon the mixture into your prepared baking dish, spreading it evenly. Sprinkle a little extra Parmesan and mozzarella cheese over the top.

  8. Place the baking dish in the preheated oven. Bake for 20-25 minutes, or until the dip is hot, bubbly, and the top is golden brown and slightly crispy.
  9. Once out of the oven, let the Spinach Protein Dip rest for about 5 minutes before serving.
