- Bring a large pot of salted water to a rolling boil. Add your chosen noodles and cook according to package directions until al dente (tender but still with a slight bite). Before draining, reserve about 1 cup of the starchy pasta water. Drain the noodles and set aside. This starchy water will be crucial for creating a silky sauce.12 ounces dried noodles
- While the noodles are cooking, melt the butter in a large skillet or wok over medium heat. Once melted, add the minced garlic and sauté for about 1-2 minutes, or until fragrant. Be careful not to burn the garlic, as this can make it bitter; you want it to be golden and aromatic.4 tablespoons unsalted butter, 6-8 cloves garlic
- To the skillet with the garlic butter, add the soy sauce, oyster sauce, honey or brown sugar, chili garlic sauce or Sriracha, and red pepper flakes (if using). Stir everything together until well combined. Let the sauce simmer gently for about 30 seconds to allow the flavors to meld.1-2 tablespoons soy sauce, 1 tablespoon oyster sauce, 1 tablespoon honey or brown sugar, 1-2 teaspoons chili garlic sauce or Sriracha, 1/2 teaspoon red pepper flakes
- Add the drained noodles directly to the skillet with the sauce. Toss them thoroughly to ensure every strand is coated. If the sauce seems a bit thick, gradually add some of the reserved pasta water (a tablespoon at a time) while tossing until you achieve your desired consistency. The pasta water will emulsify with the sauce, creating a glossy, clingy coating.12 ounces dried noodles
- If you're using it, stir in the sesame oil for an extra layer of aroma. Toss again. Divide the Spicy Garlic Noodles among serving bowls.1 tablespoon sesame oil
- Sprinkle generously with chopped fresh parsley or cilantro. For an extra touch of richness and a subtle cheesy note, add grated Parmesan cheese. Serve immediately and enjoy the incredible flavor!2 tablespoons chopped fresh parsley or cilantro, 2 tablespoons grated Parmesan cheese
