Method
 

  1. Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
  2. In a medium bowl, combine the well-drained cottage cheese, eggs, and apple cider vinegar. Use a whisk or an immersion blender to blend the mixture until it is smooth and creamy, ensuring no lumps of cottage cheese remain.

  3. Stir in the garlic powder, onion powder, and salt into the wet ingredients. Mix well to distribute the seasonings evenly throughout the mixture, infusing them with savory notes.

  4. In a separate bowl, whisk together the almond flour and baking powder.

  5. Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a soft, slightly sticky dough. Be careful not to overmix, as this can result in tougher bagels.
  6. Lightly wet your hands to prevent sticking. Divide the dough into four equal portions. Roll each portion into a ball, then use your finger or the handle of a wooden spoon to create a hole in the center of each ball, shaping them into classic bagel rings. Place the shaped bagels onto the prepared baking sheet, leaving a little space between each one.
  7. If desired, gently brush the tops of the bagels with a little water or egg wash and sprinkle with your favorite toppings such as sesame seeds, poppy seeds, or everything bagel seasoning.
