Method
- Preheat your oven to 375°F (190°C). Line a baking sheet with parchment paper.
- In a medium bowl, combine the well-drained cottage cheese, eggs, and apple cider vinegar. Use a whisk or an immersion blender to blend the mixture until it is smooth and creamy, ensuring no lumps of cottage cheese remain.1 cup full-fat cottage cheese, drained well, 2 large eggs, 1 teaspoon apple cider vinegar
- Stir in the garlic powder, onion powder, and salt into the wet ingredients. Mix well to distribute the seasonings evenly throughout the mixture, infusing them with savory notes.1/2 teaspoon garlic powder, 1/2 teaspoon onion powder, 1/4 teaspoon salt
- In a separate bowl, whisk together the almond flour and baking powder.1 1/2 cups almond flour, finely ground, 1 teaspoon baking powder
- Gradually add the dry ingredients to the wet ingredients, mixing until just combined to form a soft, slightly sticky dough. Be careful not to overmix, as this can result in tougher bagels.
- Lightly wet your hands to prevent sticking. Divide the dough into four equal portions. Roll each portion into a ball, then use your finger or the handle of a wooden spoon to create a hole in the center of each ball, shaping them into classic bagel rings. Place the shaped bagels onto the prepared baking sheet, leaving a little space between each one.
- If desired, gently brush the tops of the bagels with a little water or egg wash and sprinkle with your favorite toppings such as sesame seeds, poppy seeds, or everything bagel seasoning.sesame seeds, poppy seeds, everything bagel seasoning, dried herbs
- Bake for 20-25 minutes, or until the bagels are golden brown and firm to the touch. The exact baking time may vary depending on your oven.
- Let the bagels cool on the baking sheet for a few minutes before transferring them to a wire rack to cool completely. Enjoy them fresh!
Notes
Store cooled bagels in an airtight container in the refrigerator for up to 3-4 days. For longer storage, wrap individually or place in a freezer-safe bag for up to 2-3 months. Reheat in a toaster oven or regular toaster.
