  • 2.5 cups All-Purpose Flour
  • 1 teaspoon Baking Soda
  • 0.5 teaspoon Salt
Wet Ingredients & Mix-ins
  • 1 cup Unsalted Butter (softened)
  • 0.75 cup Granulated Sugar
  • 0.5 cup Packed Brown Sugar
  • 2 large Eggs
  • 1 teaspoon Vanilla Extract
  • 1 tablespoon Orange Zest finely grated
  • 1 cup Dried Apricots chopped

Method
 

Instructions
  1. Preheat your oven to 350°F (175°C). Line baking sheets with parchment paper.
  2. In a medium bowl, whisk together the flour, baking soda, and salt. Set aside.
  3. In a large bowl, using an electric mixer, cream together the softened butter, granulated sugar, and brown sugar until light and fluffy, about 3 minutes.
  4. Beat in the eggs one at a time, ensuring each is fully incorporated before adding the next. Stir in the vanilla extract and orange zest.
  5. Gradually add the dry ingredients to the wet ingredients, mixing on low speed until just combined. Be careful not to overmix.
  6. Fold in the chopped dried apricots evenly throughout the dough.
  7. Drop rounded tablespoons of dough onto the prepared baking sheets, spacing them about 2 inches apart.
  8. Bake for 10 to 12 minutes, or until the edges are light golden brown and the centers are still soft. Do not overbake.
  9. Let the cookies cool on the baking sheets for 5 minutes before transferring them to a wire rack to cool completely.

Notes

For an extra flavor boost, you can lightly dust the chopped apricots in tablespoon of flour before folding them into the batter to prevent sinking. Store airtight at room temperature for up to 5 days.
