Ingredients
  

  • 1 cup rolled oats ensure they are gluten-free if needed
  • 1/2 cup vanilla or unflavored protein powder whey, casein, or plant-based all work well
  • 1/4 cup almond butter or any nut butter like peanut butter or cashew butter
  • 1/4 cup maple syrup or honey, or agave nectar for a vegan option
  • 2 tablespoons unsweetened applesauce
  • 1 teaspoon ground cinnamon plus extra for rolling
  • 1/2 teaspoon vanilla extract
  • 1 pinch salt
  • 2 tablespoons finely chopped pecans or walnuts optional for added crunch

Method
 

  1. In a medium-sized mixing bowl, combine the rolled oats, protein powder, ground cinnamon, and salt. Whisk them together gently to ensure the dry ingredients are evenly distributed.

  2. Add the almond butter, maple syrup, unsweetened applesauce, and vanilla extract to the bowl with the dry ingredients.

  3. Using a sturdy spoon or a spatula, begin mixing all the ingredients together. Continue to mix until a thick, cohesive dough forms. If the mixture seems too dry and crumbly, add another tablespoon of almond butter or a tiny splash of water or milk. If it's too wet, add a tablespoon more oats or protein powder.
  4. If you are adding nuts, stir them in at this stage until evenly incorporated into the dough.

  5. Prepare a shallow dish with about 1-2 teaspoons of extra ground cinnamon for rolling the bites.

  6. Scoop rounded tablespoon-sized portions of the dough. Roll each portion between your palms to form neat, compact balls. The dough can be slightly sticky, so dampening your hands lightly can help prevent sticking.
  7. Roll each formed ball in the cinnamon-lined dish, coating them evenly.
  8. Place the finished Snickerdoodle Protein Bites on a plate or a parchment-lined baking sheet.
  9. Transfer the bites to the refrigerator for at least 30 minutes to allow them to firm up before serving. This chilling step is crucial for achieving the best texture.
