Ingredients
  

  • 1 cup strong brewed coffee, chilled
  • 1/2 cup milk (dairy or non-dairy of your choice, such as almond, oat, or soy)
  • 2 tablespoons unsweetened baking cocoa powder
  • 2 tablespoons granulated sugar
  • 1 tablespoon butter, softened
  • 1/2 teaspoon ground cinnamon
  • 1/4 teaspoon vanilla extract
  • Pinch salt
  • Ice cubes

Method
 

  1. Start by brewing your coffee strong, as you'll be diluting it with milk and ice. Allow it to cool completely. You can brew it ahead of time and chill it in the refrigerator for best results.

  2. In a small saucepan over medium heat, combine the chilled brewed coffee, milk, unsweetened baking cocoa powder, granulated sugar, softened butter, ground cinnamon, vanilla extract, and a pinch of salt.

  3. Whisk the ingredients together constantly until the sugar and butter are fully dissolved, and the mixture is smooth and well-combined. Ensure no lumps of cocoa remain.
  4. Bring the mixture to a gentle simmer, stirring occasionally. Do not boil. Allow it to simmer for about 2-3 minutes, which will help thicken the syrup slightly and meld the flavors.
  5. Remove the saucepan from the heat and let the snickerdoodle syrup base cool for a few minutes. This step is important to prevent the ice from melting too quickly when you assemble the drink.
  6. Fill a tall glass generously with ice cubes.

  8. If you prefer a creamier, less concentrated coffee flavor, you can add a splash more milk at this stage.

Notes

The snickerdoodle syrup base can be stored for up to 3 days in an airtight container in the refrigerator. It can also be frozen in an ice cube tray for up to 2 months.
