Ingredients

  • 1 loaf (16 ounces) day-old French bread, challah, or brioche, cut into 1-inch cubes
  • 6 large eggs
  • 2 cups milk (whole or 2% recommended)
  • 1/2 cup heavy cream
  • 1/3 cup granulated sugar
  • 1 teaspoon vanilla extract
  • 1 teaspoon ground cinnamon
  • 1/4 teaspoon ground nutmeg
  • 1/8 teaspoon salt
  • 2 cups fresh strawberries, hulled and sliced
  • 1/2 cup powdered sugar (for dusting, optional)
  • Maple syrup, for serving
  • Whipped cream or ice cream, for serving (optional)

Equipment

  • Slow Cooker
  • Large bowl
  • Spatula

Method

  1. Generously grease the inside of your slow cooker with butter or cooking spray. Place the cubed day-old bread into the slow cooker insert, distributing it evenly. Using day-old bread is crucial as it absorbs the custard mixture better without becoming too mushy.

  2. In a large bowl, whisk together the eggs, milk, heavy cream, granulated sugar, vanilla extract, cinnamon, nutmeg, and salt until well combined and frothy. This creates the rich, creamy base for your French toast casserole.
6 large eggs, 2 cups milk (whole or 2% recommended), 1/2 cup heavy cream, 1/3 cup granulated sugar, 1 teaspoon vanilla extract, 1 teaspoon ground cinnamon, 1/4 teaspoon ground nutmeg, 1/8 teaspoon salt
  3. Pour the custard mixture evenly over the bread cubes in the slow cooker. Gently press down on the bread with a spatula or your hands to ensure all pieces are submerged and begin to soak up the custard. Let this sit for about 10-15 minutes to allow the bread to absorb some of the liquid.
  4. Gently scatter the sliced strawberries over the top of the soaked bread mixture. Try to distribute them evenly so each serving gets a good amount of sweet, fresh fruit.

  5. Cover the slow cooker and cook on LOW for 3 to 4 hours, or on HIGH for 2 to 3 hours. The casserole is done when the center is set and a knife inserted near the center comes out clean. The exact cooking time may vary depending on your slow cooker model.
  6. Once cooked, carefully ladle the Slow Cooker Strawberry French Toast Casserole into bowls. For an extra touch of sweetness and elegance, dust with powdered sugar if desired. Serve warm with your favorite toppings like warm maple syrup, a dollop of whipped cream, or even a scoop of vanilla ice cream for a decadent treat.
