  • 1 teaspoon cornstarch optional, for thickening
  • 2 tablespoons cold water optional, for thickening

Method

  1. Pat the beef cubes dry with paper towels. In a medium bowl, toss the beef cubes with 1 tablespoon of olive oil, 1 teaspoon of salt, 1 teaspoon of black pepper, and 1 teaspoon of garlic powder until evenly coated.

  2. For an extra layer of flavor and color, you can quickly sear the beef cubes in a hot skillet with a tablespoon of oil over medium-high heat for 1-2 minutes per side until browned. This step is not strictly necessary for the slow cooker, but it significantly enhances the final taste and texture.
  3. Place the seasoned (and seared, if you chose to do so) beef cubes into your slow cooker insert.

  4. In a small skillet, melt 1 tablespoon of unsalted butter over medium heat. Add the minced garlic and sauté for about 1 minute until fragrant, being careful not to burn it.
2 tablespoons, divided unsalted butter, 4 cloves garlic, minced
  5. Pour the sautéed garlic and butter into the slow cooker with the beef. Add the beef broth and Worcestershire sauce to the slow cooker.
0.5 cup beef broth, 1 tablespoon Worcestershire sauce
  6. Cover the slow cooker and cook on the LOW setting for 3 to 4 hours, or until the beef is tender and easily pierced with a fork.
  7. If you prefer a thicker sauce, in a small bowl, whisk together the 1 teaspoon of cornstarch with 2 tablespoons of cold water until smooth. Stir this slurry into the slow cooker during the last 30 minutes of cooking. Stir occasionally until the sauce thickens.
1 teaspoon cornstarch, 2 tablespoons cold water
  8. Once the beef is tender and the sauce is to your liking, stir in the remaining 1 tablespoon of unsalted butter until fully melted and incorporated. This final addition of butter adds richness and a beautiful sheen to the sauce.

  9. Garnish the Slow Cooker Garlic Butter Beef Bites with fresh chopped parsley before serving. These are delicious served over rice, mashed potatoes, pasta, or even in lettuce wraps.
