- Prepare the garlic scapes by trimming off the tough, dry ends and cutting the stalks into manageable 3-4 inch lengths.
- In a medium bowl, toss the cut garlic scapes with the olive oil, black pepper, and half of the flaky sea salt until evenly coated.
- Preheat your grill (gas or charcoal) to medium-high heat, ensuring the grates are clean and lightly oiled to prevent sticking.
- Place the seasoned garlic scapes directly onto the hot grill grates. Grill for 3-4 minutes per side, turning occasionally, until they develop char marks and become tender-crisp.
- Remove the scapes from the grill. Immediately transfer them to a serving platter.
- Squeeze the fresh lemon juice (if using) over the hot scapes, then sprinkle with the remaining flaky sea salt. Serve immediately as a vibrant side dish or appetizer.
Notes
Garlic scapes are the curly flower stalks of hardneck garlic plants. They have a milder, sweeter flavor than mature garlic bulbs. Do not overcook; they should retain a slight snap.
