Ingredients

Puff Pastry Base
  • 1 sheet Frozen Puff Pastry Thawed according to package directions
  • 1 Egg Beaten, for egg wash
Nectarine Topping
  • 3 Ripe Nectarines Thinly sliced
  • 3 tablespoons Granulated Sugar Or brown sugar for deeper flavor
  • 1 tablespoon Unsalted Butter Cubed
  • 1 teaspoon Lemon Juice
Finishing Touches
  • 2 tablespoons Powdered Sugar For dusting
  • 1 teaspoon Vanilla Extract Optional drizzle

Method

Instructions
  1. Preheat oven to 400°F (200°C). Line a baking sheet with parchment paper.
  2. Gently unfold the thawed puff pastry sheet onto the prepared baking sheet. Using a sharp knife, lightly score a border about 1/2 inch from the edges, being careful not to cut all the way through the pastry.
  3. Arrange the thinly sliced nectarines neatly within the scored border, slightly overlapping them. Sprinkle evenly with the granulated sugar and lightly drizzle with fresh lemon juice.
  4. Brush the exposed edges (the border) of the puff pastry with the beaten egg wash. Dot the surface of the fruit with small cubes of butter.
  5. Bake for 20 to 25 minutes, or until the pastry is golden brown, puffed up around the edges, and the nectarines are tender and slightly caramelized.
  6. Remove from the oven and let cool on the baking sheet for 5 minutes. Dust generously with powdered sugar before slicing into 4 squares and serving warm.

Notes

For an extra decadent feel, serve with a small scoop of vanilla bean ice cream or a dollop of crème fraîche. Ensure the puff pastry is cold when you score it for the best rise.
